The 51% corn gives it that unmistakable bourbon-like sweetness, while the 49% barley adds a malty depth uncommon in typical bourbon mash bills. The use of virgin American oak provides a classic foundation of vanilla, spice, and caramel, while the nearly 4-year aging brings a mature, rounded character without overwhelming tannins.

Aroma:
Sweet and warming notes of buttery caramel, vanilla, and a hint of sweet, lightly caramelized popcorn. Malted cereal, toasted grains, and a subtle nutty note. Prominent vanilla, cinnamon, light clove, and mild char from the new oak. Hints of honey, dried apple, and fresh-cut oak provide additional depth. Nicely balanced between warm baking spice, creamy sweetness, and gentle grains.
Flavour:
Sweet upfront with caramel corn and honey-roasted nuts. The mid-palate contains toasted malt, light toffee, and dried apricot which transition into deeper notes of vanilla custard and spice. The finish is medium to long, with lingering notes of oak spice (cinnamon, nutmeg), charred sugar, and cereal grains. Surprisingly complex for its age partly due to the malted barley content, which brings depth and a rich mid-palate texture.
Clarity:
Brilliant and crystal-clear with no haze or sediment despite not being chill filtered. Note: floc may occur during cold weather. Thick legs that cling to the glass, suggesting good body and mouthfeel.

Mouthfeel:
Round and creamy texture from the corn, but with a slightly oily, smooth edge from the malted barley. Medium to full-bodied that coats the tongue without being overly heavy; gentle alcohol warmth.
Balance:
Well-balanced grain-to-oak ratio in that the sweetness of the corn and the grainy complexity of barley are well supported but not overshadowed by the spice and tannins from the oak. Sweetness is dominant early, with spice and char developing toward the finish. At under 4 years, it retains some brightness and vibrancy, without the overly woody notes that can come from longer aging.
